Fried Lasagna, But Make It High-Protein

What You’ll Need 

  • 2 cups Sturdy Marinara Sauce 
  • 8 cooked lasagna noodles
  • 1 cup ricotta cheese
  • 1 ½ cups shredded mozzarella
  • ½ cup grated parmesan cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups Italian-style bread crumbs
  • ½ cup all-purpose flour
  • 2 eggs, beaten
  • Oil for frying (vegetable or canola)

 

How to Make It

  1. Boil the lasagna noodles according to the package, but go just shy of fully done. Lay them flat on parchment paper so they don’t stick and tear like traitors.
  2. In a bowl, mix the ricotta, mozzarella, parmesan, 1 egg, Italian seasoning, salt, and pepper. 
  3. Spread a few spoonfuls of filling onto each noodle and roll it up like a little pasta burrito. Place them seam-side down and try not to eat them just yet.
  4. Set up your breading station: flour in one bowl, beaten eggs in another, bread crumbs in the third. Dip each roll in flour, then egg, then breadcrumbs. Pat them gently so the crumbs stick and don’t flake off during frying.
  5. Heat about ½ inch of oil in a skillet over medium heat. Once hot, fry the lasagna rolls in batches for about 2–3 minutes per side until golden brown and crispy. Drain on paper towels or a cooling rack.
