Leftover Pizza Sandwich–60g Protein!

You could eat cold pizza standing in front of the fridge again. Or you could press it into a golden, melty sandwich stuffed with grilled chicken, dressed greens, and a little Sturdy Marinara magic. It clocks in at 600 calories with 60g of protein, all while fulfilling every pizza craving without the pizza crash.

 

What You’ll Need 

  • 1-2 tbsp Sturdy Marinara Sauce  
  • 1 slice leftover pizza – New York-style works best, but any slice you love will do
  • 4 oz sliced grilled chicken 
  • 1/2 cup arugula or mixed greens 
  • Optional: thinly sliced red onions, peppers, or whatever you forgot to use last night


How to Make It 

  1. Fold your leftover slice in half lengthwise, crust to tip. Then cut off the triangle point so it folds into a neat little sandwich shape. 
  2. Place your folded pizza (crust side down) in a nonstick pan over medium heat. Let it sizzle until the bottom gets golden and crisp. 
  3. Once crisp, add a splash of water to the pan, then cover it with a lid. The steam will melt the cheese without burning the crust. Dab off excess oil with a paper towel if your slice is extra greasy.
  4. Open up your pizza and spread a spoonful of high-protein Sturdy Marinara Sauce on the inside. Layer in your grilled chicken and dressed greens. Toss in some thinly sliced onions or peppers here too.
  5. Top it with the leftover crust triangle, press it down gently with a spatula, and let the whole thing toast together for another minute.
  6. Slide your pizza sandwich onto a plate, pour a little marinara into a dipping dish, and prepare for the happiest way to eat one slice of pizza.
