Protein-Rich Muffin Pan Lasagnas - Bite-Sized Pasta Extravaganza


Lasagna is a type of pasta known for its thick layers rich in cream, cheese, and meat, that usually comes in large portions and huge trays. But did you know, this well-loved dish can be prepared in more manageable servings, especially for those hankering to have an easy-to-make snack after coming home from the gym? Enter the Muffin Pan Lasagna, which can be prepared in a jiffy while providing a filling meal rich in protein.

Protein: Approximately 25-30g per serving (1 muffin cup)

Calories: Approximately 300-350 calories per serving (1 muffin cup)


What You’ll Need 

  • 2 cups Sturdy Marinara Sauce 
  • 12 lasagna noodles
  • 1.5 lb. ground beef
  • 1 cup mozzarella
  • 1 cup ricotta
  • Salt, pepper and garlic powder
  • Chopped parsley


How to Make It 

  1. Cook lasagna noodles according to the instructions on the package
  2. Preheat oven to 350°F (175°C)
  3. Brown ground beef in a skillet on medium-high heat. 
  4. Add salt, pepper, and garlic powder to taste while cooking.
  5. Stir in Sturdy Marinara Sauce and simmer on medium-low heat for 5 minutes. Stir occasionally to prevent sauce from sticking to the pan.
  6. Half the noodles vertically and place two halves in each greased muffin tin cup. 
  7. Add 2 tablespoons of ricotta on each noodle and top with 1/4 cup of meat sauce before adding cheese. Place another layer of ricotta and meat before adding more mozzarella.
  8. Cover and bake for 25 minutes, and uncover during the last 10 minutes.
  9. Cool for 5 minutes before taking the muffin pan out.
  10. Top with chopped parsley and serve.
